I made this incredibly delicious, moist and dense banana bread when I decided that my rotting bananas were meant for a higher purpose than the garbage disposal. So here it is…for all you banana bread lovers out there.
You’ll need:
- 2 over ripe bananas, mashed
- 1 1/2 cup flour (I used whole wheat)
- 1/2 cup applesauce
- 1/2 cup Greek yogurt
- 1 cup sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/2 cup chocolate chips
What now?:
- Pre-heat oven to 350 degrees and coat a loaf pan with cooking spray
- In a bowl or electric mixer, cream together sugar and applesauce
- Add eggs and mix until combined
- In a separate bowl, whisk together flour, baking soda and salt
- Add dry ingredients to the applesauce mixture and stir to combine
- Add bananas, Greek yogurt and vanilla and stir until mixture is smooth
- Add chocolate chips and stir until evenly incorporated
- Pour into prepared baking pan and bake until a knife or toothpick inserted into the middle comes out clean, about 1 hour
- Allow it to sit in the pan for 10 minutes, then flip onto a rack to cool
