It’s hot out and you’re getting home from work late every night. Do yourself a favour and make a big batch of summer salads on Sunday to eat during the week, or whip up a quick and easy tomato salad when you get home from work. Some mouthwatering recipes after the jump.
Potato salad
* 16 new potatoes, boiled, drained and sliced
* 3 hard-boiled eggs, chopped
* ¾ cup of chopped celery
* ½ cup of chopped green onion
* 1 tsp cayenne pepper
* paprika to garnish
* ¾ cup of mayonnaise
* ¾ cup of sour cream
* ¼ cup of Dijon mustard
* ½ tsp salt
Combine all ingredients except potatoes together in a bowl, then pour over the potatoes in a larger bowl. Garnish with paprika.
Grilled veggie pasta salad
* 1 grilled eggplant, zucchini, red pepper, sweet yellow pepper, chopped.
* a bunch of asparagus, grilled and chopped
* half a Vidalia onion, chopped
* 3 cups boiled rotini pasta
* chopped fresh basil
Balsamic dressing:
* 1 tbsp red wine vinegar
* ½ cup olive oil
* 2 tbsp balsamic vinegar
* 1 shallot, chopped
* 1 tsp Dijon mustard
* salt and pepper
Whisk ingredients for balsamic dressing together, pour over salad.
Super-quick tomato salad
* 2 medium-sized tomatoes, chopped into slices
* buffalo mozzarella cheese, sliced as well
* fresh basil
* olive oil
* red wine vinegar
* salt and pepper, to taste
Lay slices of mozzarella over slices of tomato. Garnish with fresh basil, and drizzle with olive oil and red wine vinegar.
