Working from home can have its challenges. One of which is keeping up with the amount of groceries consumed when you are home all day every day. And when I can’t bring myself to fill up the cart, fill up the bags, load the bags in the car, unload the bags from the car, bring them up the elevator and unload them into the fridge (phew!), I wander on down to one of my favorite casual lunch spots. I regularly order their ‘Salmon Louie’ which is a delicious little salmon salad stuffed in an avocado. The last time I shelled out a few dollars for this little gem, it was like a light went on – this would be oh so easy to make at home!
So this week I’ve been experimenting with a few salad recipes on regular rotation here in my home. All you have to do is grab a couple of large ripe avocados, and spoon in some quinoa salad, burrito salad, quinoa fried ‘rice’, or the best tuna salad. Or choose any of your other favorite salads and throw ‘em on in there! This could also make for a fun DIY station for a summer brunch. Yum…
