Digest Digest will be a day of making, tasting, and good conversation looking at the ways we create, consume and interpret food. The lineup of speakers is stacked and include Ken Waagner, the founder of e.a.t. Chicago and Scott Friedmann, the Chief Innovation Officer at Idea Couture. There will also be a theatrical dinner (!!!) performed by The Centre for Genomic Gastronomy, a workshop by food and beverage artists/innovators BevLab, tastings from Dr. Rhea Mehta and Vams Kambucha,
