Anyhow, this experience totally changed my shopping habits. After turning a blind eye to the destruction in the fishing industry for years, I was determined to become part of the solution and to begin making informed decisions. Luckily, the Marine Stewardship Council makes it pretty damn easy! Given to wild-capture fisheries only, the MSC seal of approval (aka the little blue sticker) ensures that your selection comes from a fishery that’s committed to sustainable fishing practices. As I was thrilled to learn, there are loads of choices, from fresh to packaged. Just head to your local Loblaws and take a look!
Aaaaaand, WWF-Canada’s sustainable seafood game has gotten even stronger with the creation of School of Fish, an online hub of resources and recipes. We were thrilled to participate by creating our very own Cajun Fish and Chips Medley with MSC-certified Atlantic Cod.
There’s quite a bit of flexibility with our recipe so feel free to make substitutions!
WHAT YOU’LL NEED:
- 2 filets of MSC-certified Atlantic Cod
Batter
- 1 cup flour
- ½ cup whole milk
- ½ cup water
- 2 TB baking powder
- 1 TS salt
- 1 TS Cajun spice
Corny Tartar Sauce
- 1 cup mayonnaise
- 1 TB sweet corn relish
- 2 TB lemon juice
- 1 TB minced onion
- Salt and pepper to taste
- Chili flakes to taste
Chip Medley
- 2 medium sized yellow fleshed potatoes
- 2 medium sized sweet potatoes
- 2 plantains
- Maple Syrup to taste
- Dash of salt
