I was asked by a reader for FAST and HEALTHY breakfast ideas that could potentially be made in advance.
This recipe is actually an adaptation of a vegetable side dish that my Mom makes for Thanksgiving and Christmas, turned into a healthy breakfast idea. The recipe is:
- High protein (important for breakfast)
- Gluten free
- Dairy free

Ingredients
- 6 eggs (preferably organic)
- 1 small zucchini
- 1 cup grated carrot
- 1 green pepper
- 1 shallot
- ½ cup rice flour
- 1 tsp baking powder
- herbs of choice (I used basil and parsley)
- salt and pepper to taste
- 1 tbsp coconut oil
- 10 cherry tomatoes
Instructions
- Preheat oven to 350F
- Grease muffin tin with coconut oil
- Shred carrot and zucchini in food processor (or by hand)
- Chop shallot and pepper
- Mix all ingredients together in a bowl
- Pour into muffin tins
- Top with cherry tomatoes
- Bake for 25 min or until golden brown on top
